Aimee Mestad is the heart behind Simply Barbecue, one of Holden Beach's favorite seasonal staples. After getting her start under founder Dennis Samsone in 2017, Aimee became his apprentice in 2020—learning the ins and outs of true, wood-smoked Southern BBQ. For two years, she honed her skills under Dennis's mentorship, and when the time came for him to retire, Aimee ran the operation for a year while he prepared for his departure. In 2023, Aimee officially took the reins as owner and pitmaster.
